A Family Favorite: Vegan Shepherd’s Pie!

We have made shepherd’s pie a variety of ways.  Sometimes I look at a recipe.  Sometimes I just go with what floats my boat, a.k.a. whatever we have that sounds good ;).

This, if I do say so myself, is by yours truly.  It’s nothing major.  But, it is mine.  Simple.  Maybe kinda boring.  But, fulfilling, nonetheless.  Here goes it.

We used these burgers.  We found them at B.J.’s wholesale, but, for those non-members, do try your favorite supermarket for a yummy vegan burger or vegan ground “meat”.  Or, go for the real deal – organic grass-fed ground beef – Where can you find a $2.00 burger on a menu?  Justify it that way – $8.00, 4 burgers~

Take out a skillet/pot to cook your onion and garlic and to warm your veggies.  Turn on your oven to 4/medium-low ish.  Let it get hot.  It takes about ten minutes, depending on _______________________________________________________.  (can you fill in the blank?  :P)

4 patties, broken up into bite-sized pieces

1 bag of frozen organic vegetable medley, usually bought at Target or B.J.’s.

1 bag of organic potatoes, usually bought at B.J’s, yet Target also sells them at a doable price.

1 onion, chopped small

1-2 tbl. minced garlic ~more or less, whatever your preference

1/2 tsp. onion powder

1/2 tsp. garlic powder

1 – 2 tsp. rosemary

salt and pepper to taste

1 cup, or so, organic vegetable broth

  1. Get your tators ready!  Peel ’em, eighth ’em, put ’em in a pot of water.  Potatoes may be prepared ahead of time…once they’re submerged in water, they will not turn brown :), AND, also be sure to put on a skillet and set the stove to medium-low
  2. When you’re ready to start cooking your meal, begin with boiling your potatoes.  It takes about twenty minutes.  While they are cooking, begin #3…and, PREHEAT YOUR OVEN!  350 degrees~
  3. Throw in your chopped onion and let it soften, about five minutes; stir a few times throughout this time.
  4. Put in your garlic and mix.  After a couple of minutes, throw in your veggies and stir.
  5. Sprinkle onion and garlic powder over the entire mixture.  Sprinkle a couple/few generous pinches of salt and about 1/3 – 2/3 less of pepper.
  6. Sprinkle on your rosemary.  Once again, stir.  🙂 Turn off the heat and set aside.
  7. Mash your potatoes.  Drain.  Heat up 2/3 cup of milk in the microwave.  Pour potatoes into “their” pot.  Pour in almost all of the milk, but, leave some.  You may not need it all.  Sprinkle in salt.  Potatoes love salt.  Don’t be afraid to be generous.  Not too generous.  You can always add more.  🙂
  8. Now, mash the gageebies out of them!

It’s layer time!

Use a 9 x 13 dish.  Spray or pour oil to grease the bottom.

Potatoes, third!

Now, pour vegetable broth over the top, evenly, about 1 cup or so.  You want plenty of moisture to be retained after cooking.

Bake at 350, covered.  If you use cheese, take off the foil after the 30 minutes and let cook for an additional 10 to allow for browning…yum.
